The butterfly pea is a pretty flower that will give a fabulous blue or purple tint to your drinks.

Originating from Asia, the naturally blue butterfly pea (Clitoria ternatea) is a much-appreciated natural dye. It is also commonly referred to as anchan flower, or simply blue pea flower.

It is ideal for colouring kombucha, kefir, ginger wine, and other fermented beverages, as well as herbal teas and lemonades.

The colour of the butterfly pea infusion varies from a vivid blue (in neutral liquid) to a royal purple (in acidic liquid), depending on the pH of the liquid.
Its taste will remain neutral, with a subtle herbal touch.

The butterfly pea flower also has a recognized antioxidant effect: its blue pigment is due to anthocyanin of the flavonoid family.

For a remarkable and eye-catching effect, we recommend using 4g (3 tbsp.) of butterfly pea flowers per litre of beverage. Have fun!

Blue Butterfly Pea Flowers

I Love these!! I just tried them. I put a teaspoon or a bit more in my mug. I then put hot water inside. Let is steep for about 5-10 minutes. It is Great!! It actually tastes like Green Tea. I Love It!! I actually ate the flowers as well that were in the cup. They are soft once the hot water is on them. They are edible.
