The butterfly pea is a pretty flower that will give a fabulous blue or purple tint to your drinks.
A naturally blue Asian plant, the butterfly pea (Clitoria ternatea) is a much-appreciated natural dye.
It is ideal for colouring kombucha, kefir, ginger wine, and other fermented beverages, as well as herbal teas and lemonades.
Depending on the pH of the liquid, the colour of the butterfly pea infusion will range from bright blue (neutral liquid) to royal purple (acidic liquid).
Its taste will remain neutral, with a subtle herbal touch.
The butterfly pea flower also has a recognized antioxidant effect: its blue pigment is due to anthocyanin of the flavonoid family.
We recommend using 4g (3 tbsp.) of butterfly pea flowers per litre of beverage, for a surprising effect. Have fun!
