This wild chaga mushroom comes from sustainable wild harvesting in Quebec and is consumed for its woody taste and high antioxidant content.
Chaga (Inonotus obliquus) has been consumed for centuries in Russia, Siberia, and other Northern countries for its general health benefits.
It is said to strengthen the immune system, fight inflammation, and lower blood sugar and cholesterol levels. (ref.)
This chaga mushroom grows on birch trees in Quebec (Canada) and is responsibly harvested. Its woody taste is reminiscent of coffee, without its bitterness.
Finding chaga chunks for sale can be tough, but it doesn’t have to be!
To flavour 3 litres of kombucha, let 12g (2 tablespoons) of chaga chunks simmer in 500ml of water (2 cups) for 2 to 4 hours. Filter and mix this decoction with kombucha when bottling.
The chaga chunks can be reused once or twice, but the flavour will lose its intensity each time.
